Tiramisu Pancake



For the pancake mixture:

2 eggs
2 tsps. Vegetable oil
2/3 cup fresh milk
2 (125 gms.) package Maya Original Hotcake Mix

For the coffee mixture:

1 tsp. instant coffee granules
2 tbsps. Hot water

For the cheese mixture:

1 bar cream cheese, softened
2/3 cup confectioner’s sugar
1 tbsp. unsweetened cocoa


Step 1

Slightly oil pan and heat for three minutes or until medium hot. Combine pancake mixture in a bowl. Stir batter just until slightly lumpy (do not over mix). Pour ΒΌ to 1/3 cup batter onto preheated pan. Cook until bubbly (about 3 minutes). Turn and cook the other side for about 2 minutes.

Step 2

Dissolve the coffee granules in the water. Meanwhile, in a large bowl, blend together the cream cheese and sugar until well combined. Add to coffee mixture. Mix well. Set aside and cool. Place 1 pancake on a plate, then add a dollop of the cheese mixture, repeat the layers two more times, ending with a dollop of the cheese mixture topping each stack.

Step 3

Sprinkle with cocoa and serve immeditely. Do the same with the remaining pancakes and mixture. (Use 3 layers of pancake for every serving of tiramisu). Makes 3 servings
