Tuna Pasta Fritata Pie2017-12-05
200 gms. Ideal Premium Elbow Macaroni
2 tbsps. olive oil
½ cup leeks, sliced (white & green part
¼ cup red bell peppers, diced
¼ cup carrots, diced
1 can Century Tuna Meat Loaf, diced
½ cup Angel Evaporated Filled Milk
½ cup cheese, grated
½ tsp. dried sage
1 tsp. salt
¼ tsp. pepper
Cook macaroni as package directs. Set aside.
Heat olive oil in a meyer saute pan. Saute leeks, bell peppers, carrots and tuna meat loaf.
Transfer to a plate and allow to cool or about 10 minutes. Meanwhile, beat together eggs, milk and cheese. Season with salt and pepper.
And cooked macaroni and sauteed tuna meat loaf and vegetables. Heat a lightly oiled Meyer open fry pan. Pour in the macaroni and egg mixture. Cook over medium heat for 3 minutes or until lightly set.
Turn over onto another fry pan for an evenly cooked fritata. Slide onto a plate.
