Vegetable Fritata with Tuna

2 tbsps. Butter
¼ cup onion, chopped
1/3 cup mushrooms, sliced
1/3 cup red bell pepper, chopped
1/3 cup green bell pepper, chopped
6 eggs, slightly beaten
½ tsp. salt
¼ tsp. pepper
1 (180 gms.) can Century Tuna Flakes in Vegetable Oil, drained
1 bundle spinach, blanched
1 cooked eggplant, mashed
2 tbsps. Parmesan cheese
crusty roll
tomato slices for garnish


Step 1

Heat butter in a pan. Saute onions, mushrooms and bell pepper for 2 minutes; set aside.

Step 2

Squeeze the spinach to remove excess water and chop finley. Set aside in a bowl.

Step 3

Combine eggs, salt, pepper, tuna, spinach, eggplant and Parmesan cheese. Mix with the sauteed vegetables. Cook for 15 minutes until the middle is set.

Step 4

Remove from heat. Serve with a crusty roll. Garnish with tomato slices.
