¼ cup light vegetable oil
5 cups cooked rice
2 cups chicken, cooked then shredded
½ cup onion, diced
½ cup celery, diced
¼ cup bell pepper, diced
1 tsp. garlic, minced
2 eggs, well-beaten
1 tbsp. soy sauce



Step 1

Heat oil in a pan. Add rice and stir fry. Add the chicken, onion, celery, bell pepper and garlic.

Step 2

Stir fry some more to blend. Stir in the beaten eggs and soy sauce. Serve hot.
